I would definitely make the first step a very low plato starter. High osmotic pressure will hurt the yeast... make the first one very weak and make sure to put nutrients in.

I'm now planning to mix Muntons Extra Light and Muntons Medium 50/50. Muntons Medium has crystal malt in it, but the problem is they don't specify how much or which sort - in contrast to Briess where you get a full report. Well 4 weeks +3 days. So it's on the edge. And the supplier claims to store it room temp. Isn't that supposed to be a big no-no? If there's a chance it will ruin the beer I'm not going to put it in. Thanks for your input. I've been emailing the company who sold me the isinglass and apparently they store it in roomtemp at the warehouse. I'm going to skip the isinglass this time. 4 weeks is no good because I'm racking to secondary tomorrow and the event is on the 9th of May. Also, concerned about...
