I doubt if any of them are out of date. The dates marked are pretty arbitrary. If they have been stored well they will be fine.

Since this is a home brew forum I don't suppose many people here have bought the kegs and so can't answer your question. It seems to be a very expensive way to buy beer though.

I used to use polypins with a hand pump. It worked fine but the beer was starting to oxidise after a few weeks. It certainly wouldn't last 2 months. I now use Sankey kegs at low pressure.

I'd leave it alone. When I've done 1 gallon brews there has always been relatively more trub than when doing 20L. When you bottle you can leave it all behind.

I've had my gravity go down during the boil! Of course, this was due to a bad reading. Denser wort sinks and so drawing a sample from the tap can give a high reading. With BIAB there is no transfer from mash tun to boiler to mix up the wort. However, readings after the boil ought to be accurate sinc...

I used to use my beer engine with polypins. It works well provided you drink all the beer within about 4 weeks. The polypins let oxygen through so the beer goes off. I now use Sankey kegs with the beer engine.

I'd say don't bother. Use a purchased hop with known AA% for bittering and use your hops for flavour and aroma.
