Regarding drilling I found the safest way to get the heater cable into the fridge was to put a hole in through the compressor cover in the bottom of the fridge. I think Wulf is halfway there with his reasoning. Also lower strength beers are cheaper due to less tax being applied. This makes negligible difference to the end consumer buying a couple of bottles but is significant for the commercial user.
