Brew yourself a stout...imperial even....and throw the Belgian yeast at it. Ferment at 19-20 to keep the esters in check....you might just create something wonderful.

Was going to say that I brewed a Rice Lager using Godiva for a club challenge but looks like someone has beaten me to it!! :D It was a really simple beer (75% Pilsner, 25% Flaked Rice), mashed low (64) for dryness and fermentability and all of the hops were added in the stages during the final 15 mi...

Fair enough...you are the head brewer as the saying goes :D I can see how aging in say Bourbon casks, like Innis and Gunn do, might help develop character...but given that you are aging in a glass (? or similar) carboy I wouldn't have thought it would deliver any character...so not sure of what 6 mo...

What is the purpose of the 6 months in the carboy? what is it that you are expecting to get from such a long secondary maturation period? No one should brew with 100% RO water in my opinion. Although we may add back in Calcium, Magnesium, Chlorides, Sulphates etc etc there are other elements that are beneficial to yeast such as zinc, that we brewers do not routinely add back in. Quick question 75 min mash, Magnum hops added @ 60 mins, is that 15 min boil then add the hops or boil for 60 mins then add hops ?. I missed this when originally posted but foob4r's explanation was correct. Baiscally I don't add any bittering hops until the boil has been underway for 15 minutes.......

When i experienced wort fountains on my BM20 it was when mashing with low grain bills....4.25kg and below.....after maybe three occurrences I started adding 300-400g of rice hulls to my mash and never experienced the problem again.
