making a Galaxy Delight with the NBS yeast, took off quick and 8 days later still sitting with a good 2 inches of foam ontop. Been sitting at 20'C, just would have expected this to drop sooner. I don't worry about sealing the lid down, they never used too. I leave my lid loosely sitting on the plastic fermenter, never had an issue. Seen some fermenters with cling film on, but seems a little unnecessary in my opinion.

Dingemans Aromatic DK's Galaxy

Looking at doing DKs Galaxy recipe, the 100g Aromatic I can only see Dingemans Aromatic on the MaltMiller.
I assume this is correctomundo ?

conicals look great. I would be too tempted to be lifting the lid off all the time.
I only ever loosely fit my lid on my fermenting bucket, never had any probs, but I am sure I will be measuring my fridge up, just to see if one of those bad boys will fit.

believe my local micro was experimenting with champagne yeast, but don't know any more than that. Nothing ventured nothing gained in my opinion.

wow, lotta work there, great effort.
I have always used UK-Homebrew Horden Billys guide, in the Links tab. it keeps me on the straight and narrow and is a great aid on brew day.

it was a biggy, 1080 and I used US05.
Do I understand right that the darkest malts are for flavour, and produce little sugar for fermentation ?

i made a porter recently which seems a little too sweet for my taste. Also i think i messed up by not using enough dark malt. I want to add some bitterness and thoughtvabout experimenting with coffee additions. I assume i could also steep some dark malt and add directly to my cornie does this sound ...

Beer guns, any good ?

I hate bottling, like most people. Am I right in thinking beer gun means I can force carb my beer in my corny, then 'gun' it into bottles and be drinking carbonated beer quicker than natural carbonation. I assume this is the case, but am surprised more people aren't using them. Anyone any experience...
