The other good thing the coopers one has going for it is the 3 packs of coopers yeast that get pitched, which probably helps it along greatly.

For the Coopers RIS, you could think of it in terms of 3 tins + 1kg dextrose made up to 20l being 1 part fermentable to 5 parts water. I also think of the Coopers version having 3 levels of flavour - light from the lager, medium to dark from the dark ale, and dark from the stout all melding together...

Not made the Pilsner, but made a few of the Beers of the World range and all have been great. I'd say follow the instructions, for the first time anyway, then modify next time around if you wanted. The grains and hop tea bag that comes with the kit pretty much give all the flavour needed.

Coopers Stout
Not made this in a while as I'd been trying a few of the Beers of the World range, but finally got round to getting the Coopers Stout on. Made to 20l if I remember right, with 1kg dark spraymalt (mixed in with the plasterers stirrer on the drill for the first time, that's just amazing, dog did a run...

Meant to say, I started mine off in a 7 gallon fermenter then racked off into the normal 5 gallon fermenter after the initial eruption. Would have needed a much bigger tray or paddling pool if i'd started in the 5 gallon fermenter.
Recipe makes a fantastic brew though.

There's a thread on here for Coopers Imperial Stout with that recipe. I'm sure someone made a blow-off tube, think it worked, I just had the lid of at one side and let it go for the full blow. Had the fermenter stood in a tray (though it was in the bath for a day as the tray was only 1 inch deep). A...

I've been thinking some more on this but from the other direction. I've not brewed a lager or pilsner as I wouldn't have a way to keep brewing temp in the right range. However, would it follow that brewing a lager or pilsner kit at normal temp would create a steam beer? Might have a crack at that.

I'd have said no lagering, I didn't when making the BOTW one, and the instructions certainly didn't suggest it - and historically it was made without refrigeration, they were just making do with what they had to go with. Wiki says "Steam Beer uses bottom fermenting lager yeasts at ale temperatures, ...

Excellent stuff. If I remember right I bottled mine after 3 weeks and the final reading was 1020 as expected. I also remember it tasting fantastic from the start, though it's been fascinating the way the flavour has developed month by month since first bottled.

Have a look on the coopers website, their diy recipe of the month a month or so ago might fit the bill. It used nelson sauvin hops. I didn't bother with any readings, sorry - my hydrometer hits the bottom on the smaller fv at the end of fermentation. It got started nice and quick and was in the FV for 2 and a half weeks so I reckoned it was done.

I finally got round to bottling mine last night, and the sample I had was superb. Looking forward to tasting this a few weeks down the line. I'd also say it smelled absolutely amazing.

My bigger FV also didn't have a tap so that was another reason for racking. I primed with bog standard sugar. Aww man, if it wasn't so late i'd be having one now.
