Re: Using Elderflower
Just an update on this one... 10 days into fermentation and I'm about at my intended FG (1.007) which would be 3.5% ABV. I'm happy with the level of elderflower coming through - not in your face, but definitely there. I'm hoping that once it's conditioned and cold it'll be somewhere around intended ...

Re: Elderflowers in bloom - best use in a Kit
HI Doreblade, I've been the beneficiary of some great advice on here re: elderflower additions and brewed up a session pale with elderflower last week (see the chain in the "recipes" section. I'm also using a Grainfather). I ended up adding 20g dry flowers to the boil at 10mins, then the flowers fro...

Re: Using Elderflower
Thanks Wilf - yes, we'd heard about the perils of cat pee elderflower! If anyone's interested, there's actually a great resource on the Belvoir website about picking elderflower (they get the public to pick it for them every year for their cordials): https://www.belvoirfruitfarms.co.uk/elderflower/e...

Re: Using Elderflower
Thanks Wilf - yes, there's actually some really good guidance on the Belvoir website about picking fresh elderflower because every year they get local people picking it for their cordials https://www.belvoirfruitfarms.co.uk/elderflower/elderflower-picking/ I know what you mean about the cat pee smel...

Re: Using Elderflower
Wow! - so much great info - thanks so much all! Just waiting for some bits to come from Brew UK and hopefully it's looking like brew day towards the end of next week (though not convinced - they've gone very quiet after taking my cash two weeks ago....). I kind of like the idea of the elderflower te...

Re: Using Elderflower
Thanks very much all, I'm trying to make a summery session pale ale with elderflower tones, and reading above I'm going to have a go at including some dried elderflower right at the end of the boil (probably 5-10 mins) to avoid any wild yeasts getting into the FV and then I'm going to add cordial di...

Re: Using Elderflower
Great! Thanks very much for the advice and hop suggestion. I was kind of going down the mosaic, cascade or chinook route but maybe a Great British Summer Session Ale is the way forward! (that's probably just guaranteed a wet summer. Sorry!)
How much cordial would you suggest for a 23l batch?

Using Elderflower
Hi All, I'm looking for some advice please.... I am planning a summery session pale (around 3.5%) and would like to try some elderflower in it. Does anyone have a view on: the best complementary hops for elderflower? the best way to apply the elderflower (as a boil inclusion or "dry hop")? Thanks ve...

Re: Hawkshead - Windermere Pale
Well, I had an attempt at my version of Windermere Pale yesterday - following Fingar's original suggested recipe with a couple of tweaks. Committed a few schoolboy errors (it's been a few years!) - forgot to activate the Wyeast liquid yeast until about 1.5 hours before transfer to the fermenter and ...

Re: Hawkshead - Windermere Pale
Hi All, I'm wondering if anyone can help? I'm not holding out much hope of getting a recipe for Windermere Pale from source so going to give Fingar's suggestion a go (above) but with a 75 min boil time and adding citra for the last 15 mins of boil. I'm very new to this all-grain game (well, if you d...

Re: Hawkshead - Windermere Pale
Thanks for the advice - will give it a try. I've kind of put together a recipe based on the earlier posts and comment about 75min boil time / citra addition for the last 15 mins of boil. I'm just wondering about the comment about 30 min FO steeping - whether give it another blast of citra in a whirl...

Re: Hawkshead - Windermere Pale
Hi Charlie, Yes - I'm aware and I can't understand what's happened - I suspect there is a back story that will come out in the fullness of time... We live in Cumbria (Eden Valley) and had only been across at the tap house the week before lockdown began and it was absolutely heaving. I'm following Ma...

Re: Hawkshead - Windermere Pale
Hi Fingar, Apologies for the late join to this thread - I've just joined this forum.... Did you ever find a clone or perfect your own recipe for Hawkshead Windermere Pale? I'm intrigued to know how your attempt below came out - it's a personal favourite of mine and I'd love to give it a go! Cheers, ...
