Version 1 Stones Best Bitter
Hi all. Been brewing on and off for a bit but due to Corona have some unplanned time so.... Stones Best Bitter Those that know me well will understand that this beer got under my skin as a youth in the 80s in Sheffield. Ive tried to recreate it a few times and come close...this is my latest attempt....

Ive been using this yeast now for 6 months and getting to know it well. Its very similar to a Yorkshire yeast and likes hoppy pale beers. Trying it with a best bitter next so will se how that gets on

Haven't used a 1st generation scavenge of PJ for quite a while now. I too have used this yeast for a recent brew. My yeast calculator told me I only needed a 0.6L starter for my 23L batch :shock: I only used the dregs from a single bottle in about 30ml wort and then stepped up to 0.6L in one go. Revisted this yeast. 3 bottle dregs into 1 litre of DME at 1040. Started bubbling within 24 hours. Renewed 1 litre of 1040 DME by pouring off spent wort and off it goes.

brew done. in fermenter, 65 litres of Mosaic pale I like a happy ending! :=P Hi Jim, Ive dropped the beer into a pressure barrel to go onto a hand pull and a couple of cornies. Gassed the kegs up and its clear as a bell and lacing a glass beautifully already. Probably the best beer Ive ever brewed

So up early this morning to brew a single hop Mosaic pale. Set all brew kit up and ready...looked in HLT and had mould growing on inside. Checked mashtun and it didn't look ace. It can come from the boil off...I got a earthy cardboard taste from brew after brew. Changed yeast, changed hops still the same, then read that the boil can drive off some nasty stuff that reacts with yeast.. Make sure you boil for at least 60 mins at full chat, really give it the beans, then chill ...
