Beer line is generally either 3/8" or 5/16". You would need much higher pressures to get a decent flow rate through 3/16" tubing.

Regards to breathers as soon as air enters the beer will start to oxidise and will need to be drunk asap. A cask breather should be connected to a CO2 supply via a regulator set at around 5psi. I used to use a cask breather, but found that the lack of internal pressure made it difficult to maintain an airtight lid seal on my cornies. When first filling I give it a blast up to 20psi to ensure that the lid is properly sealed, then keep it at around 5psi thereafter.

I've got a brass fitting on mine, although it's separated by a rubber washer from being in direct contact with the s/s. I've not had any problems with it.

Does the position of the taps on your stock pots not cause them to pick up a lot of trub?
