I recently got the yearly letter from the water department. For the third year in a row Fort Wayne water has been judged to be the best tasting water in Indiana.

I pitched 5 grams of this into 9 liters of apple/tart cherry juice (1.048) at 10am and it was already burping through the airlock at 7:30 pm.

SafeAle K-97 yeast as I was shocked at the price of the 1007 and 036 liquid yeasts.

That's the yeast I use in alt.. And American wheat.

3 gallons is the best fit for my setup. I pitched one pack into a three gallon batch at 63f with ambient temperature of 62f. The O G was 1.055 and the airlock was bubbling 10 hours later.
