Crossmyloof general ale seems to stop at a sensible point, just had to do an emergency drop out of a fermenter that had a small leak around the tap when indoors warm. It's been in the shed cooling a week or so with a batch of bitter in. OG was 1043 and had stopped at 1012 now at 21 days total. May h...

Well my beers are on the way. Dark strong that's very nice but maybe not dark enough, and a Witbier that isn't particularly hazy unless some sediment is stirred up. The Wit was also mad overcarbonated so I had to take the caps off let it fizz out and top up the bloody bottle at the end! I made these...

So I made a Hoegaarden type recipe a while ago, it was/is nice. Thinking of banging out another, but I have no wheat malt left just a load of torrefied wheat - will that do the job do you think??

I also like Northern brewer, so your recipe has its attractions too.
No you can never have too much ginger for this sort of thing, need to be cautious on the spice/clove aspects but ginger is a guaranteed win!

So the beer is lovely and clear, fg 1.006 for abv 4.9%. It has a slightly odd yeasty sour aftertaste, it's clear the voss doesn't work in this style. If there was a big load of malty taste it would go. It's very well hidden by a dash of lime though, if only the sun would come out! Experimentation an...

I generally use no19 and it all comes out fine. Mash at 65 for an hour, sometimes with a bit of a 75 mash out, but that's it.
What yeast is it - if I use crossmyloof ale /s04 it comes out about 1008, CML Five comes out about 1004
