Re: Alternative to London yeast.

Crossmyloof general ale seems to stop at a sensible point, just had to do an emergency drop out of a fermenter that had a small leak around the tap when indoors warm. It's been in the shed cooling a week or so with a batch of bitter in. OG was 1043 and had stopped at 1012 now at 21 days total. May h...

Kolsch works well.

Or do it right now and leave it outside with some insulation to reduce the diurnal variation.

Re: Norwich Amateur Brewers - Brew Like a Monk competition.

Well my beers are on the way. Dark strong that's very nice but maybe not dark enough, and a Witbier that isn't particularly hazy unless some sediment is stirred up. The Wit was also mad overcarbonated so I had to take the caps off let it fizz out and top up the bloody bottle at the end! I made these...

Re: Help me lighten my mash tun

Fill it up on the worktop so you only have to lift water into it rather than a big heavy box full of wet grain???

Todays action!

So to try and get some gear sorted for the wintertime I have banged out two batches today, or rather 1.5 at the moment - about to boil! No1 is a GW recipe from the CAMRA book. Harviestoun Ptarmigan - think I had it once somewhere but also liked the name! Recipe is here https://share.brewfather.app/b...

Stout!

So I've assembled a new brewing area, or rather built a tiled worktop next to the shed. Cleaned out the mash tun and the bizarre green copper gunge in my big kettle caused by leaving copper cooler in what may have been chemsan - abundant verdigris if you forget about it and go on holiday for a coupl...

torrefied wheat for a wit???

So I made a Hoegaarden type recipe a while ago, it was/is nice. Thinking of banging out another, but I have no wheat malt left just a load of torrefied wheat - will that do the job do you think??

My Dads garden has loads of Rhubarb growing in it - you are giving me ideas!

Do you boil the Rhubarb first?

Re: The 'C' Word

I also like Northern brewer, so your recipe has its attractions too.

No you can never have too much ginger for this sort of thing, need to be cautious on the spice/clove aspects but ginger is a guaranteed win!

Re: Shed!

My last Kveik experiment was a last minute Christmas dark beer with ginger/spice and loads of choc/dark crystal malt that was really nice. I would say "unlike" this one! Party is off, my Dad took ill and died in June and dealing with the contents of his house and all the financial stuff is taking al...

Re: Shed!

So the beer is lovely and clear, fg 1.006 for abv 4.9%. It has a slightly odd yeasty sour aftertaste, it's clear the voss doesn't work in this style. If there was a big load of malty taste it would go. It's very well hidden by a dash of lime though, if only the sun would come out! Experimentation an...

Re: Crisps No. 9 Maris Otter

I generally use no19 and it all comes out fine. Mash at 65 for an hour, sometimes with a bit of a 75 mash out, but that's it.

What yeast is it - if I use crossmyloof ale /s04 it comes out about 1008, CML Five comes out about 1004
