Flaked Wheat

I picked up some plain flaked wheat from my local health food shop and noticed they also have roasted flaked wheat and malted flaked wheat.
What difference would these make to a wheat beer ?

Malted wheat would be slightly more fermentable with slightly less contribution to body/mouthfeel. Roasted wheat would likely lend similar characteristics to roasted barley: roasty/toasty aromas and flavors, dark caramelized melanoidins, dark stone-fruitiness, all depending on how roasted it is, and how much of it you include. I've brewed with roasted wheat many times, with interesting and delicious results, especially for seasonal/special/spiced recipes. Go for it!

I have no idea; never heard of roasted flaked wheat or malted flaked wheat, so you've got to brew with them and tell us all about the results.
I'm just here for the beer.
