PROGRESS (AGAIN)

I'm just reading Big book of brewing and Dave Line seems to love this hop,as I'm inexperienced,question-

Is is ok to swap say,Fuggles for Progress in a recipe or is it a no no?

Whats the best way to try them (good recipe is obvious if you know one) as he's made me really fancy trying them

If you want to experiment with a hop i would take an approach of brewing 3 identical batches and only alter the hopping rates and addition times. use one single variety and you will soon get a feel for the diferent flavours that can be imparted.

Pick a style eg. ordinary bitter
OG 1.040

84% pale malt
8% Crystal
8% brewing sugar

pick a hop e.g. progress

hop the 1st batch
30 IBUs at 90m

hop the 2nd batch
10 IBUs 90m
20 IBUs <30m

hop the 3rd batch
10 IBUs 90m
15 IBUs <30m
5 IBUs steep
dry hop

I haven't used fuggles or progress for some time, but to my taste they both go good in darker beers so I would not hesitate to swap one for the other.
But I must confess that I use progress as the finishing hop in my #6 Hopping Street IPA.
I'm just here for the beer.
