Use them in anything, I think they're great hops too.

Nelson Sauvin is very nice in a dark ale

I don't think any hops (except earthy ones like Fuggles) really go with roasted malts but thats personal taste.

Thanx for that i have just bought Rakau the other day and when i was breaking my hundred gram bag down into smaller amounts into my air tight bags for the freezer, WOW the smell absloutley amazing.I have heard that the other new hop from New Zealand Moutaka is also a very very outstanding dual purpose hop, us brewers have been spoilt and like me we are like kids in a sweet shop. :D :D :D

I have been tempted by the Moutoeka hops too for my next beer... maybe a lager.

Nearly ordered some moutoeka, chickened out though and went for more Saaz

Forgot to mention I used NZ Hallertau (Pacifica) last year for just about everything, I got a kilo for 20 quid or something. Nice hops.

We use New Zealand Hops a lot in Australia, it's the only country where we can import hop flowers from (as opposed to hop pellets) for quarantine reasons. I find the Fuggles to be a brilliant substitute for UK Fuggles, and hops such as Motueka (previously known as B Saaz but nothing like a Saaz) are great in American style Ales.

However one hop well worth trying is Green Bullet which is high alpha but also a good aroma hop for a lager. Steinlager uses it. I made an all Green Bullet lager and it had a subtle bitterness that hit the middle of the tongue but then slid away leaving you wanting the next swig  and a tantalising aroma as well. Quite different to any Euro hop.
