I think US05 is basically the dried version of WLP001 anyway......and in my opinion it's a lovely yeast for US Pale Ales.
Anyway....I've made my decisions and my water is almost up to temp (forgot to set the timer last night - Doh!)
I'm going to do this:
Grist:
5Kg Maris Otter
200g Medium Crystal
150g Caramunch
150g Wheat
Hops:
11g Chinook Flowers FWH (a user-upper I found in the freezer)
10g Simcoe Pellets FWH
25g Centennial Flowers 10 mins
25g Simcoe Pellets 10 mins
25g Centennial Flowers Flame Out
Which leaves me with 25g of the Centennial left to dry hop with.....
My yeast is going nuts now. Doesn't look like it'll be finished by the time I'm done, so I think I'll just seal the FV up tightly and pitch the yeast in the morning.

I was going to postpone mine until tomorrow too - but then I realised it's my youngest son's birthday party - and I'd be in the dog house if I brewed through that! I'm just going to have to fit it in today around my "Dad's Taxi" duties.....
Luckily, the Mrs. decided she wanted to go out shopping by herself this morning, so for now the kids are all in front of the telly/DS/PS3/Xbox and I'm in the garage!

Recipe looks very nice, I've never used caramunch before, what does it give to the beer?

Well.....the blurb says: A very special and rare malt only produced in Bamberg in northern Bavaria. It is made in a similar way to Munich Malt except that caramelisation is allowed to progress further and kilning is conducted at higher temperatures. As to what it really adds to the beer, I'm not sure yet as I bought the bag to do a clone recipe back in December and I haven't tasted that yet...
