Hops with Nelson Sauvin

Post by djbadger » Sat Dec 11, 2010 3:48 pm

I'm brewing a pale ale tonight to see the New Year in with, and I thought I'd try the Nelson Sauvin hops I bought a while ago. I'm planning to use 100% PM and make something fairly zingy to contrast with a barrel of more 'traditional' English bitter made last week.

I was wondering whether to go for NS throughout at 90 mins, 15mins and flame-out or if a mix of hops would be better. I have in the freezer:
Target
WGV
Hallertau Mit
smaller amounts of
Amarillo
Cascade

I'm not fussy about being true to the NZ style, just want a good pint to give out on the night.
Any thoughts?

Just drinking my Nelson Sauvin experimental brew at this very moment, I went with no hops for the first 30 minutes of a 1 hour boil then 50g cascade followed by 50g NS at 20, 25 at flameout and dry hopped with 25 after one week for 14 days. It's turned out to be a really rather nice brew in my opinion.
