80 degree steep

hi guys,

i made my third extract brew today, a variation on the brewuk 'way to amarillo' with magnum as bittering hops and amarillo at 15, 5 and steeped.

Previously i have added the steeped hops as soon as i removed it from the heat and counted from there but today i let the wort cool to 80 degrees and steeped the hops for 30 minutes.

the wort cooled naturally in the stockpot with the lid off, i trust that this is acceptable or should i be cooling the stockpot in a basin of water to let it cool quicker?

The quicker the better at least that is what I do. I also keep the wort covered as much as possible whilst cooling so as to help fend off any contaminating nastiness prior to pitching the yeast. 23 years and its worked for me :beer:

As above. The quicker it cools the better break you get meaning less chill haze in the finished product. Keep the lid on so nothing falls in or you'll be going lambic before long.

So, lid on and in a basin next time?

What about the steep temp? Should I take the pot out of the basin and let it cool naturally?
