Amarillo smells sickly

Post by bosium » Thu May 27, 2010 11:12 pm

I used a boat load of Amarillo in a beer recently (first time using), along with equal amounts of Cascade, then dry hopped it with more. I just opened the fermenter now to remove the hop bag and whooey does it stink. Smells like sickly sweet orange peel, guess it must be the Amarillo.

I must be honest, it really doesn't smell that good to me, wish I'd stuck to Cascades. Anyone else have this experience with Amarillo before?

I love amarillo, but it is very aromatic, give it some time to age and it will settle down.
How long has it been fermenting?

Are you bottling it?
As if you are it might be worth ageing it a bit in a secondary before you bottle, if you dont like the stinky smell.
Fermenter(s): Lambic, Wheat beer, Amrillo/Cascade Beer
Cornys: Hobgoblin clone, Four Shades Stout, Wheat Beer, Amarillo/Cascade Ale, Apple Wine, Cider, Damson Wine, Ginger Beer

It's been in the FV for about three weeks. I added the dry hops (30g cascade, 30g amarillo) in a boiled grain bag about 12 days ago and took them out last night. I'm planning on kegging it this weekend and lagering it without CO2 until it drops clear, then prime and bottle afer that, so hopefully it will have calmed down by then.

Just had an unappealing nose to me, really distinctive sickly sweet smell. In stark comparison to my last all-cascade ale which smelled delicious, kinda like apricots.

Amarillo is a jacked up version of Cascade, according to a lot of the guides.

With regards to the other thing i.e. the hops
They will be there in the morning, if you want to pick them up after going to Wivenhoe first time.
Will be digging them up for you to night

Hmm, I've read that too - 'super cascades' or whatever but honestly I think they taste quite different beyond the initial citrusy american flavour. They definitely smell quite different. The smell I get from my beer is (unsurprisingly) the smell I get from Crouch Vale Amarillo Ale, but just a lot stronger.

Great, thanks again re the hops - should I give you a ring before I come or just turn up?

Dry hopping with Amarillo does make the fermenter smell like a fruit cocktail, but it usually fades after a few weeks in the bottle/keg, and you'll end up wishing you had used more. Also, it tends to end up smelling almost pure grapefruit, although initially it may have more of a peach/mango aroma to it.

Kegged this today and bottled what wouldn't fit. The beer has changed so much over the last week, it's settled down quite a bit and tastes pretty good actually.

Fresh Amarillo out of the packet are quite something. Hard to beat when it's in the beer though.

It's really calmed down now, tasting quite good actually. I must admit though that I really prefer Cascade but the Amarillo really adds an extra depth to the flavour of the beer.

I think they taste just like oranges. Probably the most distincitive hop variety, I can pick Amarillo out of a beer easy. Not as easy as Geof but pretty good.
