The nice man at my local brewery has sorted me out a bag of Styrian Goldings, he said that the AA of this batch is very low at only 2% what would it normally be? I guess i'll just have to use more to achieve the right EBU is that a problem?

Wheeler lists them as being typically 7.9% :shock: , so presumably his recipes are based on this; I've tended to see them at around the 4 - 5%. If you were using making someone elses recipe it would be advisable to adjust the hops used for the full boil

I would tend to save them for additions nearer the end of the boil, they're a great aroma hop. You're going to have to throw in quite a lot to get much bittering from them.

I've seen them used for bittering in Belgian recipes but with alpha like that I'd use them for aroma. Hopefully they're fresh as they're from a brewery.

Chuck about 15g in just before your turn the boiler off.
