Not really had them since June, only another 3 months and we will be getting this years crop.

Have you tried the Wai-iti before Critch?

Did a single hop with them and wasn't that impressed considering the power of other NZ varieties.

I like Nelson Sauvin but not as a single hop in a beer. I've had a few commercial examples and they just don't do it for me. I find it works really well in a blend with American hops (punk IPA is an example)

Marris Otter 4.5kg
Crystal 60 150g

I aimed for about 1051 OG ended up with 22L

Then hops

75 min: Nelson Sauvin, 10g Amarillo 10g, NZ Cascade 10g
15 min: Nelson Sauvin, 15g Amarillo 5g, NZ Cascade 5g
0 min : Nelson Sauvin, 10g Amarillo 10g, NZ Cascade 10g
80° steep: Nelson Sauvin, 10g Amarillo 10g, NZ Cascade 10g

Dry hop after 5 days: Nelson Sauvin, 15g Amarillo 15g, NZ Cascade 15g

Fermented with Nottingham.

I did treat the water with acid to drop the hardness and up the sulphate a bit.
This is the best beer I've made so far and I've repeated it several times - though I have varied the yeast.

Any ol' low-key ale recipe with <10% caramelized malts will work great. Simply follow your tried-and-true recipe substituting Nelson Sauvin in the late aroma and dry-hop additions.

Here's a decent single-hop-trial recipe described in For the Love of Hops, but you needn't split the pale malt that way:

Russian River "Hop 2 It"
Grainbill: 74% American 2-row Pale, 13% Maris Otter, 10% Crystal 120L, 3% Aciduated Malt
Single hop of your choice: 90 min = 5-10 IBU, 30 min = 20 IBU, 0 min = 10 IBU, dry hop 1 week
neutral, high-attenuating yeast
OG: 1052-1056
IBU: 30-40
COLOUR: 9/18

I know Nelson Sauvin is absolutely the "bee's knees" worldwide lately, but I'll be honest, I've had a handful of beers containing it so far, and been underwhelmed every time. Maybe my nose is broken. Your mileage may vary.

Now, on the other hand, Critch mentioned Rakau: ABSOFUKKINLUTELY BLEW MY MIND.

I like the look of that :D

What other yeast have you used and which in your opinion produced the nicest brew?

Hi Tom,

I also tried S04, S05 and WLP001 (though that's just S05 in fairness - but I wanted to have a go with liquid yeasts)

They were all nice, the S04 had some extra yeasty flavours that went well with the beer. The nottingham one was the best but I actually think that was because it had the above hop additions - the others had the same hops, just switched around a little. I also tried it with american cascade but I think the NZ one is better.

Have to agree with you there, the NZ Cascade is to die for. Had some pellets last year, so much more to them than the American stuff.

YES! Here's my Ratebeer review of Schlafly Rakau Session Ale, brewed entirely with Optic Pale Malt, a Scottish late barley variety and Rakau hops from New Zealand. Unbelievable complexity from only two ingredients.
AROMA 7/10
APPEARANCE 4/5
TASTE 8/10
PALATE 3/5

Tasted on tap at Bottleworks into a nonic half-pint. It poured a nice amber colour with everlasting white head, spritzy little bubbles and lots of Belgian lace. Aromas of berry fruit, strawberry shortcake, smokey, resiny, woodsy, mellow but outrageously flavorful. Flavour was nutty, biscuity, light grainy sweetness with faint apricot, perfectly ripened plums, golden raisins, gingerbread crackers--and I swear--peppermint and Wrigley's Juicy Fruit gum. Medium body and carbonation, very well-rounded bready mouthfeel and lingering caramelly bittersweet aftertaste (odd since it contains no caramelized malts.) I’ve sampled all the Schlafly hop trials. Rakau is by far the most surprising so far, and my favorite. I went back for a growler fill, and hope to get more before it’s gone. I didn’t expect to rate a SMaSH so highly.
