Citra and subtlety

Post by raiderman » Sat Jun 15, 2013 10:52 pm

I've just transformed a lacklustre to be junked IPA into something approaching liquid sunshine by chucking 40g of citra pellets into the cornie and a fortnight later I couldn't get enough of it. I assume citra comes from Texas! Now I want to give citra an English twist and try for a subtle grapefruity effect. Rather than chucking loads in late as is my wont often without any bittering hops. I was thinking of a low 60m addition then 30' 15 5 and a late soak but nothing overboard. On the hop front I was thinking of cutting the citra with some Delta challenger and endeavour the idea being to preserve some citra character but in a refined subtle English way. Obviously I have no real idea what I'm doing and if it all goes pear shaped ill chuck a load of citra into the cornie and rescue it! On the other hand it could be quite nice. Any pthoughts anyone would be appreciated

If you want to give citra an "English twist" don't use citra! ;-) It's SO american through and through. However Oakham citra is a FANTASTIC British cak ale with an american pale ale citra twist.

If you want to be subtle use then do a little early/full boil (or a more neutral or English hop), a little late at 15 minutes and a handful dry and that's it. 60/30/15/5/soak *is* overboard. 60/15/handful dry would be closer to subtle english hop usage qwith a nice fruity estery yeast, a little crystal or none at all and just 2-row pale malt. Remember, trad british = simple. American = brash and over-complicated ;-) Then bottle condition or serve on gravity fresh or cask with beer engine - low carbonation and cellar temps add britishness!

Might be a way to go. I just can't get back into the habit of hoping at the beginning of the boil. I tried on Sunday but I just can't do it. I need therapy!
