what is the best way to use simco hops ie early or late , maybe as a single hop brew any ideas or recipies welcom thanks :)
soon be dead thank beer for that no pain where im going :-)

Definitely late. I haven't used it early but there are some reports of an onion/garlic flavour if used early.

I did a couple of IPAs with Simcoe matched with Columbus and Centennial. In a 90 minute boil the first batch of Simcoe went in at 30 minutes from the end. Here's the thread:

I was quite sparing with them and only stuck 20g in as a dry hop too, and it was a nice US hopped IPA, so you don't need to go mad with them... unless your a massive hop head :D

Last year I brewed an amber ale using simcoe, summit, and saphir that turned out quite nice.
Saphir went to FWH, all three went to bitter and it finished with summit and saphir.
I'm just here for the beer.
