what is the best way to use simco hops ie early or late , maybe as a single hop brew any ideas or recipies welcom thanks

Definitely late. I haven't used it early but there are some reports of an onion/garlic flavour if used early.

I did a couple of IPAs with Simcoe matched with Columbus and Centennial. In a 90 minute boil the first batch of Simcoe went in at 30 minutes from the end. Here's the thread:

I was quite sparing with them and only stuck 20g in as a dry hop too, and it was a nice US hopped IPA, so you don't need to go mad with them... unless your a massive hop head

Last year I brewed an amber ale using simcoe, summit, and saphir that turned out quite nice.
Saphir went to FWH, all three went to bitter and it finished with summit and saphir.
