Why does beer yeast like us05 etc come in 11g sachets, where as cider and champagne yeast comes in 5g sachets?

I imagine is down to the pitching rate required for either.

And even 11.5g is normally on the tight side of the recommended pitching range.
US05 and S04 recommended range is 50 to 80 grams per 100 litres. so 11.5g just scrapes into the bottom end of that for 5 gallons / 23 litres.
I think Notty is a tad higher still.

Having said that, I've played around with different pitching rates and not found any difference in performance or end result.

Just read this which suggests pitching half what you would with beer, which matches up with the 5g sachet size. In my last cider I pitched 11g of US05 which made an aweful mess all over the brew fridge after it escaped 3 times!!
