st peters Ruby ale yeast.?
Hi all I am going to brew my first clone St peters Ruby ale. I am not sure what yeast st peters brewery use? There are loads of Irish yeast to chose from but I don't think st peters would use a irish yeast there would use one of English varieties but which one?

St. Peters is proud of their proprietary English ale strain, but it's almost certainly derived from Whitbread-B, like so many others. S-04 would be fine. Ferment like St. Peters Brewery does at 22-23°C.
St Peters bottles are not intentionally bottle-conditioned. But, word to the wise: they do filter yeast before bottling but do not pasteurize, and sometimes their filtering system doesn't work so great. Next time you go to buy a bottle, hold several bottles to the light and select the one with the most yeast deposit. Other forum members have successfully harvested homebrew yeast from St. Peters bottles. I thought I had once, but then I accidentally let it get infected in one of the step-up stages.

Thanx seymour for the reply. Would white labs whit bread yeast have the same profile as so4? I have never tried taking yeast from a bottled commercial beer before I will welcome the challenge, I have heard of people harvesting fullers yeast and Guinness yeast but never had ago my self.

It depends which White Labs stain you mean. White Labs WLP017 "Whitbread Ale" is supposedly derived from the Whitbread A sweet strain, which is not as tart and high-
attenuating as Whitbread B dry strain. White Labs WLP007 "Dry English Ale" is supposedly derived from the Whitbread B dry strain, as is S-04, so those two should perform similarly (although not identically, I know, I know…)
