Fast yeast!

Over the last few years I've been gradually trying out zll different types of yeast and one thing I've figured out is that I'm a very impatient person when it comes to making beer. Basically if a yeast takes a week or longer to attenuate then it plays havoc with my brewing schedule, also space is a premium and beer sitting around in fv's is no good to me as ineed to get on with the next batch. I know, not a good thing when it comes to beer but if I find a yeast that makes good beer quickly with no ill effects I absolutely love it.

Two yeasts that have worked well for me are london ale wlp013 and dry english ale wlp007, both yeast zre quite capable of reaching fg in 2-3 days, i know notty is fast but im not overly keen on the flavour. One yeast I dont have time for anymore is us05.

I took the dregs from two bottle of Bengal Lancer, made a starter and used that in a 1039 beer brewed 2nd Sep. It had done most of its work in two days (1010). I left it eight days (as I usually ferment for two weeks) and it managed to drop another one or two points (1008).

Yesterday at noon I pitched another beer 1042 on the yeast cake (I know, only needed a cupful). It was 1010 at 9am this morning - fast enough? :shock:

Anyway, assuming that is the same yeast as 1845, it appears to be fast:

Mangrove Jacks M07 is really good fermented out a porter I made recently from 1056 down to1012 in 48 hours , it also packs down to bottom of FV like concrete and drops bright in barrel after 5 to 7 days.

t58 is very fast but you might not be keen on the profile. Tad funky, some cloves, finishes dry.

S-33 is a really fast yeast and in my opinion has a pretty neutral profile. Certainly not the Belgian one that it seems to have attributed to it is the adverts.

Windsor is often done within 48-72 hours and is quite hard to get going again in my experience.

Repitched some coopers yeast recently and it was down from 1044 to 1010 in 36 hours!
