This is the last chance for this yeast..
I bought a kilo of the stuff.Used and threw away 2 brews of 700litres and 85 litres due to wonky fermentation...Ive decided to give it one last go on the little kit.
Heres the recipe for a clone of the fabulous Abbeydale Moonshine

for 70 litres
4.3 abv 1044og 1011 fg
31IBU

13kg of Lager Malt
1.5kg wheat malt

mash @ 67 degrees for 60 mins

hops

30 gms Willammette for 60 mins
50 gms Willammette for 30 mins
75 gms Willammette for 15 mins
75 gms Willammette at flameout

recirculate for 15 mins

yeast BRY 97

Describe the wonky fermentation.

For wonky...

The 2 fermentations did the same thing...

Set off beautifully, then at the end of the fermentation whilst crash cooling, they both formed a dusty skin on the top of the beer. Then would not clear (or stop fermenting) and left a strange chemically twang to the beer. This twang got more and more, to a point that it was undrinkable. The first time it happened, I put it down to an infection (this was on the big 5BBl kit)...then it happened on the small 1/2Bbl kit..But, It was all fermented from the same packet of yeast (500gms). I had previously used BRY97 on a brewers gold brew on little kit and it was simply glorious.

I have an unopened block of yeast (500gms) and was planning to bin it...but for the sake of the cost of a few hops and malt, I want to give it one last razz
