hey people i am really interested in doing this,and am getting the stuff for it this weekend and get it on asap.
But what i was wondering is,do i add just the apple and honey and the yeast and then give it a good shake and let it ferment and the add the pineapple or should i put it all in?
Also is it ok using larger or wine yeast with it?
Sorry for being so later getting in the thread but i thought it time i started experimenting.

Yeah put it all in at the same time. Dissolve the honey into a litre of apple juice on a stove- no need to get it too hot or it, let it cool a bit then bung it into the DJ that you've already put the 2 other litres of apple and 1 litre of pineapple in, shake to aerate and chuck in the yeast - so long as it's not too hot. As long as you've got a bit of a gap in the DJ to allow for the vigorous stage of fermentation (at the start) you can always add apple juice after this point (If you do i'd be tempted to microwave the additional juice first and then let it cool before adding - just to be paranoid)dubboy wrote:hey people i am really interested in doing this,and am getting the stuff for it this weekend and get it on asap.

Whatever yeast you use will impart a slightly different taste and result. However to be honest I've never thought it's critical in TC making to worry too much over yeast beyond the fact that wine/ champagne yeast will result in a drier stronger TC as it ferments out more, whereas it's possible that a high alcoholic TC will be too much for a bread/ ale/ lager yeast. Again though I think you would have to be making part-rocket fuel for it to kill off the yeast. (Yeah OK hands up, guilty as charged

Personally I tend to use a generic (youngs) wine yeast for all TC and sweeten to taste once fermentation is over. I find this method has much more effect on the flavour of the TC than worrying whether i'm using Lalvin EC1118 over White labs WLP775 (though to be fair i've never used a white labs cider yeast, so it may be fantastic for TC)

Mix the AJ,pineapple and honey together(use some of the AJ to rinse out the jars of honey),add the yeast and stand back!!
Any yeast will do as it should fully ferment out and be very dry.

Started the same recipe last night with tins of peaches in syrup rather than the pineapple juice. This morning the kitchen worktop was a total mess. Decided to call the brew "Nicearse".

well i made up 2 dj on saturday on with ritchies wine yeast and one with youngs super yeast compond and they are bubbling away nicly and have a great head on them now.
Just one thing would it be alright to put it in to 2ltr coke bottles when it done

2LTR COKE BOTTLES WILL BE PERFECT.
HAVE TO SAY, WHEN I TRIED THIS THE FRIST TIME, A WEEK AFTER BOTTLING, I DID NOT LIKE IT AT ALL. so after a four weeks in the bottle i was surprised by just how tasty it is now! so tasty that me and a mate had to 'test' two bottles to be sure it was as nice as we thought!

Here’s a tip – if you drink cider (or wine) at home buy it in those boxes with the plastic taps on them. Once you’ve drunk the contents chop the corner off the bag inside, sterilise it with Milton (etc) and fill it with your (flat) cider. Squeeze the air out and fold the corner over to make it air tight – Gaffa tape over the folded plastic to hold it. Put it back in the box and you have cider on demand – as the cider is dispensed the bag collapses so no air gets into it, therefore the cider will last a LOT longer than from a bottle. If you are cunning and have too much time to kill why not turn the box inside out and make you own label for it.
