peach shnapps?

Post by Doughboy » Sat Apr 05, 2008 9:57 pm

ive had an idea to try something....

I brough a box of 12 tins of peaches in syrup from asda (19p per tin).
What i was planning, was to liquidise them juice and slices together tommorow with my smoothie maker \ food processor (utensils sterilised 1st)...i reckon i could get it quite fine and smooth...and get maybe a litre or so of puree...
Then add to a demi, then maybe 3-4kg of T&L in a water solution brought to boil and fill FV up to 4litres...
im pondering quantities tonight, but trying to remember the prohibition kit for peach shnapps on the water \ sugar content and hoping the peach pulp will be strong enough flavoured to taste?..
If need be, ill get some flavouring from my HB shop and add at end..

am i been rediculous here or has tinned peach yeilded any results b4? - if so, any recipe ideas?

As long as the peaches have no additives you should be ok fermenting them.

Why not make some mash using the turbo yeast that goes up to 23% and flavour it using still spirits essences?

yeah smokey, thats what im thinking...
I have got the 23% yeast ready and waiting.
Ive thought about it and after confiming there are NO preservatives in the tins, im gonna pre-boil a sugar solution of maybe 3KG in 2 litres of water..
Then use my smoothie maker on my food processor to do 3 tins at a time topped up with some of the solution...
Ill do this 4 times adding to FV at end of every blend - until its up to 4litres.
Its only a cheapo experiment at end of day, but i cant see why I cant get something out of it!..
Ill keep posted on this one & try and do some pics...

I think 3 bags of sugar per 2 litres of water will be way too much. I use 6 bags to make 21 litres of mash as per the instruction of the yeast I use.

mmm,maybe ill drop it..
I seem to remember using 2 or 3 in a prohibition kit once...i cant remember?
Given the syrup in the tins, it may be wise to ease off i think...

Use your hydrometer on a little of the filtered fruit syrup (post pulp) and see what it is, then do the same for the sugar syrup (adjusting for heat) and you'll have a better idea of just how strong it's going to get

story so far...

the peaches being pulped...in sanitised blender...
Image

pulp being poured into the FV...nice and smooth...
Image

made up a solution of 1kg sugar & 200mils honey..
Image

mixed into about 1.5litres of - some snow i carefully collected - top inch of 2 inches - filtered thru carbon filter once thawed - then preboiled..
Image

and finished item - which is starting to ferment in 1st hour - and looking like swiss cheese with all the holes in the concoction!
Image

my best estimate from the OG from the pulp & OG from the sugar honey solution is its true OG is about 1.130 - maybe a bit higher

If it dont work out, for the sake of 6X16p cans of smart price peaches & 1KG of sugar & pushing the boat out with maybe £1 worth of honey, its cost about £2.50 - i had some turbo yeast left so didnt buy any specialy for this..
I had hell of a time making it and the fun was worth the cost alone
It does smell nice though at mo and its starting to ferment well....
Ill keep yer all posted on the next step.

Blimey  1.130

I've not made anything that high in alcohol. If it only gets down to 1020 you'll be looking at 14.5% !

Your yeast must be on steroids if it can manage that!

The highest fermenting yeast you can get is 23% Turbo Yeast. After that it's onto things you shouldn't talk about.

When I did peach wine it fermented right out of the fv and I had a couple of inches of head space, we ended up splitting it into 2 dj's and then re-combining it when it came time to rack it off.

Hope you have better luck and remember even IF it goes wrong we want pictures LOL

I hope for my sake it aint got any worse as my ars3 is history

Lucky for me, it had settled down when i got home from work at 10pm tonight...
So i set about cleaning the area & splatter covered FV with my "turbo purple" in and priming TCs...

this is good practice for me cos im working out how to resize images..
Image

i use a plastic container for accidents - in this case it was essential - containing most of the spill...

all things cleaned and back into the spare room within an hour!.

SHMBO - was in bed asleep when i got home..lol...although TBH, think she's had a hard day and gotta be up early in morn for work again.
Our bed is on the wall against the 'box-room' where the 'experiments' are taking place - she reckoned she could hear a popping all night that kept her awake - i dont think it was the FV thou as i couldnt hear it...LMAO.

more news soon...incidentaly, the smell coming from the peach aint bad - its got a distinct alcoholish aroma, not just sweet peach anymore.

only thing different i would have done would have been to add lots of pectolaise. i did a similar recipie with mangos months ago, and im still waiting on them to clear. i think the pectolaise would have made a big difference
