TONIGHT, THE 12TH NIGHT OF XMAS, apparantly is some sort of traditional night for ladies to meet up and drink wine and bitch about us...
this is good. the boss is outta the house. i can then turn the floor, the side boards, the cuboard handles, shelves and maybe even the walls themselves and especially the kettle in to a delicious sticky mess! Muhahahahahahahah.
thats right, im planning a night of brewing!
the menu:
i have decided to go for large quantities to, ah hem, prepare for the glorious summer, that us in the north of ireland will have to stay indoors for due to the driving rain and bellowing wind...
so iv got a few twenty ltr mineral water bottle (borrowed from the office...)
in one im going to stick 12 500gram jars of rasberry jam, three tins of rasberrys, and three frozen punnets of rasberrys(from asda). i also have a bag of rasberrys i picked last autum that i think i will stick in to. along with this will go the pith and juice of 4 lemons, yeast nutrient and, 4 teaspoons of pectolaise, 5 teaspoons of tannin, and a couple or so of youngs wine yeast.
in another 20ltr container im going to make cider. ive got two bin bags of small apples left over from pressing, which have kept their shape etc. and 8 bramleys. going to blend the lot, stick them in. going to then disolve 1kg of soft brown sugar in a carton of lydle apple juice, pour it in. then i shall fill the rest up with apple juice. i will add 4-5 teaspoons of tannin and 4 teaspoons of pectolaise. i will not be using new yeast as i have a cider (one of my previous recipies on here) which needs racked off. i will just rack it then put the new ingredients on to the lees.
i spent the yesterday evening shopping with the missus. managed to find 4 punnets of plums reduced to 50p each, so im going to turn them into wine. i will stick a kilo of sugar, boil them down to mush, stick them in my nice new xmas present mash bucket, teaspoon of pectolaise, yeat nutirent, a little acid, and 1 teaspoon of tannin, and youngs wine yeast, and a gallon of water. should be good.
also while at the 6th layer of hell that is tescos, i noticed that they have a new juice on sale, tescos own brand pear juice. now i know the problems that people have had here with the lydle pear juice, but i couldnt resist (espically as the pear cider i pressed in october is fantastic already). so, im going to whack 4 ltrs in with two teaspoons of pectolaise, half teaspoon of tannin, and 100grams or so of sugar, along with the usual youngs wine yeast. hell if it doesnt work, or just looks a layer cake, i will buy a few more ltrs and stick the lot in a 20ltr bottle along with a few blended bramleys and 10 ltrs of apple juice.
If anyone has any suggestions or tweaks to the recipies please let me know. you have till 6pm!

PICS... no problem. but ive never done that before. what do you guys load them up to?
also, i bought two 2ltr cartons of dodgy lookin polish blackcurrent juice. so im going to stick in two jars of blackcurrent jam to bloster, 1 tsp tannin, acid and nutrient and the afore mentioned yeast. you have just got to love lydels.

well that was three hours of hard core brewing. the kitchen is a mess, and the missus nearly stuck to the floor when she came back. pure class.
the cider didnt go to plan. turned out i had two sink fulls of apples. so i had to hastily bottle the last of the pressed cider, and use the other big bottle. however, the two big bottles of 'cider' are far two pulpy, so im going to split them in two three and top up with more apple juice. that will be 60ltrs of cider come the summer!!!
the rasberry worked a treat and smells devine. the other two dj's are full of blackcurrent and the other one has 'perry'. also went to the shops on the way home and got more plums... so my new fermintation bin now has two gallons. score!
the way i see it, works done for a while at least. and hell the credit crunch made me do it. that auld git Gordon anit gettin no more money outta me!

Based on the originality of this thread I pureed a 500g tin of pear halves in the syrup they came in and poured this nto my 5 ltr DJ with 4 ltrs AJ. Twice now I've found the airlock on the other side of the worksurface...
If it doesn't get infected I'm looking forward to this one.
Also have a 500g jar of cherries in syrup (thanks Lidl) that I'll do the same with.
