My latest Tropical brew

With all this cold weather we're having I was looking for something tropically inspired to brew up. Here's what I've come up with


3 Allspice
1 Cinammon stick
100g of candied peel




250g of molasses
1 fairtrade banana
Lalvin EC1118 champagne yeast




3 litres of coconut water
1 litre of coconut and pineapple juice



OG 1054
I'm going to call it The Tropic of Madness

a.k.a The big yellow floater

Looks a bit "wrong" though Still floating there on top of a dark brown molassed liquid soup

Update on this

And the jury says don't bother. It smells lovely with a sweet banana aroma but the taste is just bland coconut water. Admittedly it's 5% coconut water but still...

The banana worked much better in the mead i've made - the smell is there but the flavour has also been imparted and mixed nicely with the honey. I think it will be fantastic after a few months of aging
