Grape Juice Wine -.

Post by pob » Sat May 09, 2009 6:01 pm

I thought I would try to make my first grape juice wine today, so bought three cartons of red grape juice but I could resist adding something else so I also picked up a bottle of home brand backcurrent cordial. Got home mixed everything up, added sugar, that's a whole other story, added some additives, and pitched the yeast and felt rather satisfied with myself. I then decided to read the ingredients of the cordial and to my horror found it contained Potassium Sorbate. Is there any point leaving this to ferment out or should I just tip it all down the sink and start again?

You could bring the lot to the boil (obviously this will kill the yeast so more will be needed) for 10 minutes to drive off some of the preservatives but it may just ferment slowly on its own, myself I use the grape concentrate from Wilko's and add 100% pressed fruit juice to the DJ after the initial fermentation is done.

Thanks for the responses and sorry about the delay.

I've left it 24 hours and there is definitely fermentation taking place, if a little slow. Lesson learnt, always read the ingredients.
