when making cider if i was to use both eating and cooking apples what sort of percentage of each should i use? 60% eating 40% cooking? i dont want it to be too sour though. my mates dad did a batch just with cooking apples and it was f***ing sour! however it all got drunk anyway.

Fifty/fifty isn't it?

Add a few Crab Apples as well. ;)

It depends on the sweetness and bitterness of the apples, this years batch will differ from next years batch so any quantity you are given will not be correctly exact, trial and error I'm afraid.

i did about 70 eater and 30 cookers and it has, after 6 months turned out to be fantastic. curious is right too, need to get a big bag of crabs to booster the tannin

thanks for that everyone. i have wine makers tannin to add so i guess that would do instead of crab's.
