Exceptionally Fizzy TC
I have recently bottled (say in the last 2-3 weeks) bottled my batch of TC.
When I open a bottle up to sample, there is a whoosh of fizz and I have to be ready with a pint glass to catch it all. To me this sounds like over primed, but I only primed with a litre of apple juice. Part of me then thought maybe I had not left it in the demi-john long enough but it was in there for 3 weeks in a warm corner and I could see no more gas being given off.
I am using Champagne yeast, but didn't think it would give it this amount of fizz.
Any suggestions?

Whats your type of bottle? If they are screw cap you can breathe them then retighten.
Remember the weather is getting warmer so there is more pressure in your bottles!

They are in screw top bottles, stored in the garage, which I guess does get very warm. Does this sound like the main reason I have a lot of fizz in my bottles then?

The colder they are when opening the better.
When cold more CO2 mixes into the liquid.

Sounds more like pressure than fizz as such!! - best thing is stand the bottles upright, let them sit undisturbed for an hour, and then breathe the caps slightly (ie quarter twist til they hiss) - whats coming out is c02 and so long as you don't breathe them until they stop hissing totally theres no risk of air invasion and subsequent oxidisation spoilage.

I might that in advance then, as I have been pouring them warm over ice.

A litre of apple juice per demijohn you say?
I use 30ml of apple juice per pint.

I might have mis-understood the recipe then
I start with putting 4 litres of Apply juice and 100g of sugar in the demi, then top up to 5 before mixing.
should i be using 4 1/2 litres of AJ then priming with 1/2????

Well they are in the garage, in plastic bottles, will vent them when i get in, or stick em all in the fridge.
So is filling the demi-john with 4 1/2 litres the way to go then prime with whats left after?
I personally left it quite some time in there for homefully, there not to be much active yeast left, but I might have been wrong.

My recipe was for 4 litres of AJ, plus tea and grated apple, leave to ferment, then rack off and add another litre of AJ, then leave to ferment again...Big Al wrote:I might have mis-understood the recipe then![]()

Once thats completely finished, rack off again and top up with a bit more AJ (around 100 - 200 ml should be enough to fill the DJ), bottle straight away and prime with a tad more extra sugar.
Seemed to work for me, in a cack handed cocked up sort of way...
