Elderflower cordial/wine/champagne

My wife had been banging on about how much she used to love elderflower cordial as a child, so over the weekend we went out and picked a load of elder flowers.I found a recipe for the cordial and made it up for her. The problem is that when she tasted it she said she doesn't like the taste anymore. Typical!

Anyway not one to miss out on an opportunity I sterilised a demijohn threw in the 2 litres of elder flower cordial, topped it up with water, took the OG which was a very respectable 1090, and then threw in some yeast and yeast nutrient, plus a handful of crushed grapes. We shall wait and see how it goes.

Not sure if this will be a wine or champagne. Possibly a wine or a slightly sparkling primed wine due to the high OG

One way of finding out what will happen, eh?!

What you get out depends very much on your yeast. A good wine yeast should be able to ferment dry from 1.090 but sometimes they get stuck in the face of that much sugar all at once. The nutrient and grapes should help with that, as would some lemon juice or similar (did you use some of that in the cordial?). Looking forward to hearing how things turn out.
