Starting Grav and taste

Post by Walrus81 » Sun Jun 07, 2009 5:31 pm

Hello,

I've done a few ciders and am happy with a dry or bone dry finish.

However SO likes sweet cider, not a problem as I have adjusted the taste prior to bottling or used a campen tablet to stop fermentation at said sweetness. Campden tablet is my preferred method.

The question is this, is it better to up the O.G and stop with a campden tablet to get a higher %

or

To let the brew ferment out and add sugar?

I'm thinking that the first option is the better, any reason why not?

You could add a bit of apple juice straight from the carton to the glass after pouring the cider. That's what some people do when they make turbo cider.

Hi Jim,

Cheers for the response, I've always been a little disappointed with TC, so may stick to AG brews!

Ive been experimenting with the use of artificial sweetners (saccharin tablet, canderel etc) just added to the FV as these will not ferment. Also the use of yeast that will not ferment as far as champagne yeast, thereby leaving some sweetness behind. This may not solve the problem of two tastes from one brew, but may give a few options. Raspberry jam in the TC I started tonight!
