I'm putting on my first TC tonight, as an experiment while I wait for my current brews to condition. I was originally going to use the simplest method possible (apple juice, yeast and time...maybe a little honey as I love it) but then I read the AJ-sweet tea-demerara-yeast recipe and got intrigued. However...
Would that particular recipe work with Munton's Gold yeast? That's all I could pick up yesterday to ferment the TC with, and I don't want to go fooling with the basic recipe if it's going to make my efforts undrinkable.

Hi all hope you dont mi9nd me jumping in on this but I have just made another TC (first one went t*ts up). All I have used is AJ and yeast, the OG was 1045 and its been fermenting 5 days and the bubbling has stopped so i syphoned it into another DJ I took a reading and it was 1000, going by the calculator I make that about 6%, tasted it (very dry). Should I put it into bottles now? also should I put anything in the bottles i.e sugar and what amount, when they go in bottles do I put them in a cold place? just struggling a bit with the jargon on here with (racking) is that just syphoning to another vessel or do you add things when racking. Need help on this cos at the moment I have it in a demi john just sitting there. P.S can I add pectolase to clear it and if yes do i add it to the bottles or the demi john. Cheers in advance

I would top the demi john up to the neck with more apple juice and let it ferment out again, then bottle it with 1/2 tsp sugar per pint, then leave the bottles in a warm place for a week to allow secondary fermentation, then put them in a cool place.paulbrrtt wrote:Hi all hope you dont mi9nd me jumping in on this but I have just made another TC (first one went t*ts up). Racking is just a term for syphoning your brew off the sediment in to another vessel.
I add pecolase when making the brew, you can add it to the demi john when you rack it off though.

Cheers for the quick reply but I cant add anymore to the demijohn as its full already near enough, should I put in some sugar and leave it a week?
