@DREADSKIN: So the more fruit the better and if I boil the damsons I'll release more pectin which will need to be dealt with... Got it... Thanks :)

Ummm... A couple of unknown pears and a few unknown apples plus an enormous Blenheim Orange apple tree in the garden. I may get adventurous and try something with them ;)

I'm lucky enough to live on a 1700 acre country estate so there's plenty of other stuff around to play with :)

good man. build yourseldf a press and your off! i did a gallon of pear cider from a couple of unknowns last year and it was great.
you got me going today too. i dug out some plums and elderberrys from the freezer and boiled the lot. three gallons of red red wine on the go now!

Heh... I had an epiphany this afternoon... I have 4 FVs and it annoyed me that I always had to keep one empty, but if I have 3 wines and one beer in primary fermentation, the beer will be ready and barreled before I need to rack the wine! Sorted! 5 gallons of Zin Blush on the go too now :D
