Black rock cider

Hi all

Im on my first ever brew and its cider i have a couple of questions. its black rock cider and i followed the instructions to the letter, it said it would take 10 to 14 days now been 16 days and we have had warm weather too! my hydrometer reads 1012 - 1015. and im wondering if i leave it any longer will it go off? its stopped bubbling a few days ago, im supposed to wait till 1006 right before i bottle? but i dont want to bottle too late and ruin the cider any advice please guys ?

I have tasted it its delicious !!! its even a little sparkly (bubbles) is this normal?

Once you have kept your process pretty sterile and have an airlock on it, no harm can come from leaving it to ferment longer, I had a cider 4 months in a demijohn in the past, no problems, my present turbo cider is now in the fermenter 3 weeks and will get another 2 more.

Oh thats good to know i would have thought things would have stated growing after a month :lol:
I will leave it untill the weekend then now i know theres no hurry to bottle!

The instructions on kits are often made so as to produce the fastest brew possible, not necessarily the best brew possible. Homebrew will rarely suffer from more time at any stage of the process, in fact the opposite is true, patience can really pay off rewards with homebrewing. As a beginner you are eager to get it done and dusted, but a little time can be a good thing :)
