Working on my first cider

Post by Charles Daniels » Tue May 25, 2010 5:49 pm

I didn't measure my starting SG. However I measured it today at 1010
I know there is sugar in there which hasn't been fermented or eaten by yeast

Should I re-pitch with champagne yeast? Or more cider yeast? Or should I just let it sit there.

I'm on week 4. I racked the cider last week. However due to some loss, I topped it up with sugar water.

Patience, leave it three months or so if you're wiling to wait. Don't pitch more yeast the other stuff will still be doing it's job, just slower as it's moving on to more complex sugars.

Thanks for the advice!
Cheers!
Yeah I'll let it sit there a few months. See how it goes!

Oh and I'm wondering how concerned I should be about the lees.

There was a lot of lees before I racked it.
I checked yesterday and there's no where near the same amount, but there is obvious lees present in all of the little depression areas of the DJ and along the bottom in sort of a square, where the plastic DJ is lowest. So quite a bit still I'd say.

I guess I'm not certain if the lees at that amount will effect the taste.
Or if it would be worth racking it again at some point.

I checked it earlier today and it's kicked back into life again.

Just to update!

I've bottled the cider from one of the DJs. The other DJs full is sitting in my garage. I'll bottle it sooner or later.
I hope the cider clears out. It looks insanely murky.
A few friends wanted to try it, and then stopped in terror when they saw a bottle of it.
Eventually someone was brave and we shared a bottle. I reckon it's only 5.5%
The taste was unusual as there was quite a lot of apple taste on the tongue, but then, it just...evaporated.
Once you drank it down there was no after taste. No feeling that you'd drunk anything at all.
If that makes sense.

I started my second attempt yesterday. I pushed the gravity up to 1060 for this new batch.
It's bubbling away like mad!

What was your recipe? It sounds like you added no tannins for complexity of flavour, you should be adding a strong cup of tea to it, brewed on three bags or so.
