Blackberries
So it's looking like we are in fro a bumper crop around here this year.
Normally I make a load of jam, which I still intend to do.
This year I thought I might try some wine, maybe a blackberry cider or even an AG blackberry stout.
Anyone got a realiable recipe for any of the above, I'll have a stab at at least one of them anyway!

This last summer, I made a Scottish Ale to which I added a few kg of fresh/frozen blackberrys, however, I was not really happy with the result, it seems to have an almost 'port like' taste rather than anything that is distinctly blackberry.
The previous year, I made an English Ale with raspberrys which was significantly better IMHO.

This is my next brew Purple Haze
4.00 Kg Pale Malt
0.25 Kg Crystal malt
0.25 Kg Chocolate malt
0.25 Kg Amber malt
0.25 Kg Rolled oats
25g Northern brewer at start of 90 min boil
25g Fuggles at start of 90 min boil
2.3Kg(5Ib) Blackberries steeped for 1/2 hour on flame off.
5% ABV and 35 EBU
I've made this before without the blackberries and it's v.nice, but want to try something different.

Any good guides to follow?
I've tried looking around but not really found anything great.
I read that Blackberry alone, is kinda weak & ends out similar to Rose & that it's better to mix with Elderfberry. I just happen both within yards of my house.
I've never tried any kind of brewing/winemaking & have no equipment, hilarious really.

Good idea! I've run out of space in my freezer. Memissus insists on putting bread an meat in there, which means I'm down to one shelf for hops. No room for berries. Jam sounds like a good idea for TC brews through the year! Purple ciderSpud395 wrote: Goes well in turbo cider![]()

Are you related to the DREADSKIN of 'Bramley Apple 18 page recipe thread TC fame'. He was the one who got me distracted with < Other Brews in the first place. Now I don't know what's happening to me. I'm making wine and I'm thinking about making Sloe Gin next. What's going on! I need to get an IPA on the go.
The bramley is a nice touch with TC though!
