I've only ever done a TC once.
I used Sain$burys value apple juice and Nottingham.
OG was 1050, finished at 1010.

I'm gonna make up the following:

4.5L T*sco Apple Juice
2 Bramley cooking apples (skin off & blended)
5g Nottingham yeast

??? dunno what I'm doin really :lol:

Can you boil down AJ to concentrate sugars without adverse effect to fermentation? Hoping for 1.050 start and 1.010 finish.

If I start with 7L of 1.030 AJ and boil that down to 4.5L that's SG1.050 (maybe)

I'd imagine you will get a cooked apples flavour (like pie filling) and you might get some pectin setting, which would cause a haze unless you killed it with pectolase. Just bung some extra sugars in - honey or whatever.

_Or_ you might be able to get apple concentrate from a health food store. Apple and Pear concentrate might make an interesting TC addition but I've never tried it. I don't know what else goes into it.
