Elderberry & Runner Bean Wine
I made some elderberry and runner bean wine a while back from a CJJ Berry book. It's still in the demijohn and is probably in need of racking. A couple of weeks ago I realised that while I'd used dried elderberries, the recipe called for fresh and I'd failed to adjust the quantity. I have a felling the wine is going to have a rather overpowering taste. Does anyone have any suggestions as to what I can do?

Elderberry wine often tastes rough when young. Stash it away somewhere dark and cool, re-rack it every 3 to 6 months and taste it in a year. Our year-old elderberry wine is just becoming drinkable and I expect it to continue to improve over the next year.
