Hi all
Im looking for a basic mead recipe that i can use for two things.
The first is i want to have a batch bottled ready for xmas and the other is i want a batch that i can leave in bottles until xmas next year. I aim to brew both batches this week. looking at 20 litres per batch
Any suggestions

There are loads of places on the web for mead recipes. I suggest you start with:

(really a melomel, or possibly a metheglin, but easy and tastes lovely.) I have made this as my first attempt, but without the cinnamon as I don't like the taste, and with GP wine yeast, tasted wonderful

Tbh...I thought mead had a long long conditioning time like 12 months ?

'Traditional' mead does, however by applying more 'scientific' brewing techniques than just adding yeast to honey and water, you can get it to ferment and condition much more quickly. Mine, using the above recipe (more or less) with yeast food fermented in 2-3 weeks and was perfectly drinkable after a further 6 weeks. I'm hoping that it will improve up to Christmas
