TC and Champagne Yeast

Post by mahdel » Tue Nov 30, 2010 8:57 pm

I just pitched a TC with Champagne Yeast (lalvin). I've gotten a very low boiling ferment, whereas all my other TCs have been explosive after a few hours or at least a day or two. I've never gotten more than a half inch of yeast explosion from this one. Should I repitch with one of my ale yeasts or is this normal?

I use Champagne yeast for all my ciders, it does ferment a little slower to some other yeasts but Champagne yeast will give you a better end product than an ale yeast.
