stuck fermentation????

stuck fermentation????

hi started a peach schnapps last wed, so 8 days ago all bubbling well slowed after 5 days now nothing,not even a slight bubble in the airlock, its ment to take 2/3 weeks so not sure if its stuck any ideas on what to do.

2 litres of cold water, then added
1 litre boiling water,then
1600gms of sugar with sachet of sucrose and citric, then shake to disove the sugar
then had to sprinkle the yeast into half cup of luke warm water and leave for 10 mins stir a bit then leave for 5 add water slowly to it then add it to the jar and also add the yeast nutrient , top up with cold water and thats it untill fermentation is complete. it the prohibition original liqueur kit

Have you checked the SG? I find that these ferment very quickly, but if the temperature is too high I believe that you can end up with less than optimal amounts of alcohol. I did one of these before Christmas, and IIRC it had fermented out in a week. However, they often slow right down after an initial rush, so any leaks in the system mean no bubbles at the airlock. You really do need to check the SG of these to see if fermentation has finished.

Having said that, there is no harm leaving it for another week or so, just to be sure, then carrying on. Worst case scenario is that it hasn't quite finished and you get too little alcohol and too much sweetness (hence the advice in the instructions not to add all the sweetening sugar in one go, I think).
