Rosehip Picking

After weeks of walking the dog and enjoying the lush aroma off the rosehip bushes i'm now seeing the seed pods form.
So my question is when is the best time to pick them and whats a good recipe for a rosehip wine?

Also, how much would be used to add floral notes to an ale?

As I understand it, harvesting them is not for a long time after the first frost around november

IIRC C.J.J. Berry's wine book suggested after first frost too - though I couldn't say how informed that was or wasn't.

Yes, I agree with the other posts, after the first frost. But regardless, when I made a rose hip syrup some time ago, I picked them in October and stuck them in the freezer.

Never tried it in beer. I was thinking of making the syrup this year and added it towards the end of a boil, but again I don’t know how much. Any enlightened individuals out there?

The frost thing may be like parsnip/carrot/etc wine - it converts some starch to fermentable sugar. So the freezer technique may allow earlier picking. Or amylase...
