Battle of Hastings TC

I named this TC last night after mixing 3 litres of apple juice,1 litre of pineapple juice and 340g grams of clear honey......i ended up with a SG of....... 1.066 :wink: :wink: .
I used a cider yeast this time(youngs),but i cant imagine it being any drier than with an ale yeast :shock:
My wife picked up a jar of whole cloves for me today(as well as 23 litres of apple juice!!!!!),and i think in the name of science i am going to do a few trial brews with various herbs and spices that have been on the spice rack for years but not opened(why is it called a spice rack when herbs are kept on there as well? :?) .Does anyone have any recommendations for types of spices that suit a TC :?:

I reckon cloves will go well with a cider, cinnamon too, but how did you come up with that name
SG was 1.066 so i thought of 1066...Battle of Hastings :lol:

If you do use cinnamon, I would advise boiling it first. I just threw a couple of sticks into my fermenter and it did nothing at all. No flavour was released. I was quite gutted to be honest.

Battle of Hastings has fermented out to 1.002 from the SG of 1.066(if anyone can tell me the strength of this or give me a link to a converter it would be helpful...cheers!).
The TC isnt clear yet,but with honey and pineapple i dont think it will :? .
From the taste i had from the sample jar it is very dry with a real scrumpy(a real rough scrumpy from some Somerset farmyard off the A371 by Shepton Mallet :shock: )look, smell and taste to it,which i dont mind :wink: .
Think i will bottle it with a spoon of sugar in each bottle and leave for a while!

Just had the last bottle of this TC and it is great.Carbonation is fine,not to fizzy but helps to lift the pineapple aroma.It doesnt feel dry in the mouth either unlike other TC's i have done,which is probably thanks to the pineapple!
The cider had cleared well after being left in my garage for about 5 weeks after priming,and had a sparkle in the glass when poured(until i got some sediment in at the end :cry: ).
This will be brewed again,but might be on a larger scale as my secondary carboy is sitting idle at the moment :wink:
If i scale it all up to 4gallon i can bottle a crate(16)and keg the rest 8)

This TC is worth brewing so if anyone tries it, please let me know what you think :?:
