Windfall Apples
Friends of mine have a tree which is starting to loose its apples. Is it worth trying to make something from them given they're probably not ripe?

I usually make apple wine from the windfalls.
Fermenter(s): Lambic, Wheat beer, Amrillo/Cascade Beer

If the apples are a bit bland it can be use full to buy a small amount of apples, to add to your windfalls
i.e. if your apples are a bit to 'bity' (I may have made that up) add a few kilos of bought or other wise obtained sweet apples.
Apples do make a good basic table wine, out of what most people chuck or let rot on there garden.

Don't forget, windfall apples have dropped for a reason......
Yes, they are usually unripe, or at least not fully ripe (plus higher in acid, lower in fruit/natural sugars). I'd suggest that you just rinse them in cold water, then trim off any bruising, then re-rinse them in water that's had some lemon juice added, then just freeze them down until you're ready.
The freeze/thaw method helps break down the cells of the fruit, so you can juice them more easily later on.

p.s. Oh and the rinse in the water with some lemon juice, is just to help prevent too much oxidation of any of the apple flesh that's been exposed in the trimming down.....
