Elderflower champagne

Post by suitsyousir » Fri Jun 01, 2012 4:15 pm

I have put on about 14 litres of eldeflower champagne using the river cottage recipe http://www.channel4.com/4food/recipes/c ... gne-recipe which I successfully made last year.

I put this on on Tuesday, and nothing was doing so added some champagne yeast on Wednesday, which I mixed with lukewarm water and sugar. I checked it had started fermenting prior to pitching.

Since then nothing appears to be happening. I have sterilised a spoon and given it another good mix up but there is no apparent ferment going on.

The only thing I did differently was doubling up on all of the listed ingredients to make a double batch. I used half a sachet of champagne yeast.

Any ideas anyone please?

Have you any yeast nutrient you can add to help the yeast?
1/2-1 tsp per gallon

Assuming its in a closed vessel give it a good shake to get some O2 in there which yeast needs at the start.

Good luck

Has it started yet? My TC can sometimes have more than a 2 day lag time.

On double checking I think it may be a little cool in my cupboard where I usually ferment. The hot weather has cooled off where I am. I have given it a bot of a shake and wrapped it in a blanket and it seems like something may be happening. Ill keep an eye on it and maybe give it a good stir again tomorrow if I need to. I don't have any yeast nutrient, and won't be able to et any until at least next wednesday so I will have to hope it works. thanks for the tips guys.
