Hi all,
I'm a complete noob to TC and to anything but kit brews and tesco fruit juice wine, so I thought I'd pop by TC cherry.
I am a huge cider fan, mainly during the summer though, but I'm bored and want a change from my normal brews.
So I just thought I'd start off with a DJ full of standard Tesco from concerntrate apple juice TC and work from there. I've heard about adding the string tea and various yeasts, but what I've heard a lot of is that mostly this comes out quite dry.
Now I prefer a medium to sweet cider, I just find that the dry stuff makes me even thirstier if you know what I mean. So what I was wondering if I could introduce sme more fermentables to bump up the OG then kill the yeast off before the gravity gets too low? But I'm not sure what having a high FG will make my brew taste like?
Also, I'm interested what different sorts of apple juice will give me a different final product, will a cloudy apple juice give my a cloudy TC for instance? Or will using just crappy tesco own juice give me a crappy TC?

All the cheapo juices give similar results. Likely they all come from the same Chinese factory.
DO add tannin, either as tea or as powdered tannin. Makes a difference.
The easiest way to get medium/sweet is to let it ferment to dry then add some non-fermentable sweetener, such as sucralose. It's lightyears simpler than stopping the fermentation early. And even if you did that, if you want any fizz in it you'd have to force carbonate it.
BUT! There's a yeast on the market now with some sweetener (and nutrient?) mixed in. Suggest you get some.
Cloudy juice is made by treating ordinary juice (mainly with heat, I think) to stabilise the particles. I don't know if the yeast would break them down or not.
